Method

  1. Peel the plantains and cut them width-wise into 3 or 4 pieces. (Tip: The easiest way to peel the plantain is to cut roughly 1/4 inch off each end, carefully slice the skin down one side without cutting into the flesh, and gently pry the peel off with your fingers).
  2. Heat 1 inch of vegetable oil in a skillet on medium heat until hot.
  3. Fry the plantain pieces on both sides for about 3 minutes, or until the pieces are golden.
  4. When they are golden, remove from the pan and place onto a plate covered with a paper towel.
  5. Flatten the fried plantains gently until they are about 1/4 inch thick. (Tip: Place the pieces one at a time between 2 pieces of waxed paper and flatten with your hands. Be careful not to put too much pressure, or the plantain will stick to the waxed paper).
  6. Place the flattened plantains in the hot oil again and fry until both sides are golden brown.
  7. Drain on a plate covered with fresh paper towels (be sure to change paper towels in between the 2 fryings) and sprinkle with salt.
  8. Serve immediately.

Notes:

Tip: Do not use yellow or yellowish-green plantains; it vastly changes the taste. Be sure to change paper towels between the two fryings.
