Arroz (Brazilian Style Rice)

by Camila Souza
This traditional Brazilian-style rice, known as Arroz, is a simple and flavorful staple perfect for feeding a crowd. Sautéing the rice with onions and olive oil before simmering ensures perfectly separated, shiny grains every time.

Method

  1. Heat the olive oil in a large heavy saucepan over medium heat.
  2. Add the chopped onion and cook until limp. Do not let it brown!
  3. Add the rice and sauté until the grains become shiny.
  4. Add the water, cover the pan, and cook over low heat until all the water is absorbed and the grains are tender.

Notes:

Be careful not to brown the onions, as this will change the traditional white color and delicate flavor of the rice.
