Method

  1. PREPARATION
  2. Spaghetti: Put the spaghetti into plenty of boiling water, stir it, bring it to a simmer, turn the heat off, put a lid on and leave it to finish cooking for 10-12 mins.
  3. Vegetable: Mushrooms, tomatoes, and lettuce should all be washed and cleaned. Remove the base of the reishi mushrooms and set it aside.

  5. Step 1: Peanut Butter Sauce
  6. To make the peanut butter sauce, mix all of the ingredients listed into the bowl and heat for about 1 minute, depending on the thicken you desire. Add a sprinkle of chili powder if you prefer it spicy.
  7. Instead of serving the spaghetti with the heated sauce, you may choose to serve it naturally pureed.
  8. Step 2: Vegetables
  9. Sauté the sliced eggplant with the reishi mushrooms in a little olive oil until the eggplant is soft and the reishi mushrooms are fragrant. Season with a pinch of salt to taste.
