Method
- Heat the olive oil in a large saucepan over high heat.
- Add the diced Spanish onion and sauté for 5 minutes, or until softened and translucent.
- Add the chopped tomatoes, grated ginger, and minced garlic to the saucepan and bring to a simmer.
- Stir in the finely chopped serrano chili, water, brewed coffee, tamarind paste, berbere (or chili powder), ground cumin, and roughly crushed coriander seeds. Bring the mixture back to a simmer.
- Reduce the heat and let the sauce simmer for 40 minutes.
- Add the agave nectar and continue to simmer for another 10 minutes, or until the sauce has thickened enough to coat the back of a spoon.
- Remove from heat and let the sauce cool completely before storing.
- Store the cooled sauce in a tightly-covered container in the refrigerator for up to five days.
Notes:
Cook time does not include chill time. Store in a tightly-covered container in the refrigerator for up to five days. The original recipe called for 'honey-style sweetener', which has been substituted with agave nectar to ensure the recipe is fully vegan.
