  1. PREPARATION
  2. Begin by finely chopping 1 onion and 3 tomatoes, then mash 4 lemongrass stalks. Carrots, potatoes, onions, and mushrooms are cut into bite-sized pieces.

  4. Step 1: Cook the Broth
  5. In a stockpot, begin by heating a little bit of cooking oil. For a few minutes, sauté the onions and tomatoes until the tomatoes have softened and created their natural color.
  6. Following that, add 1 liter of water, 4 mashed lemongrass, and 5 cubes of palm sugar.
  7. Cook for 10–15 minutes, or until the broth has drained and thickened to around 1/2 of its original level. You'll notice that the tomatoes's natural hue is quite stunning and appealing.
  8. Remove the lemongrass, then add 500ml of water. Next, add the hard vegetables, such as potatoes, carrots, and fresh shiitake mushrooms.
