  2. Begin by finely chopping 1 onion and 3 tomatoes, then mash 4 lemongrass stalks. Carrots, potatoes, onions, and mushrooms are cut into bite-sized pieces.
  4. Step 1: Cook the Broth
  5. In a stockpot, begin by heating a little bit of cooking oil. For a few minutes, sauté the onions and tomatoes until the tomatoes have softened and created their natural color.
  6. Following that, add 1 liter of water, 4 mashed lemongrass, and 5 cubes of palm sugar.
  7. Cook for 10–15 minutes, or until the broth has drained and thickened to around 1/2 of its original level. You'll notice that the tomatoes's natural hue is quite stunning and appealing.
  8. Remove the lemongrass, then add 500ml of water. Next, add the hard vegetables, such as potatoes, carrots, and fresh shiitake mushrooms.
  9. Step 2: Season to taste
  10. Salt and vegan seasoning powder can be used to taste to enhance the saltiness. Season it again if you want it to taste better.
  11. Stew for a further 10 minutes, or until the veggies are barely soft and tender, before adding soft vegetables such as onions and mushrooms.
  12. Step 3: Finish and Serve
  13. Sprinkle with a few basil or culantro herbs to enhance the flavor.
