  1. PREPARATION Soak the dried wood ear mushrooms in boiling water for around 5 - 10 minutes until they expand and turn completely soft.
  2. Then pick them up and examine each piece, removing the hard stems if necessary. Allow them to rinse and drain before shredding.
  3. Lemongrass may be chopped yourself or bought the pre-chopped one. Rinse the cucumber, then shred it into bite-sized thin strips.
  4. Place the peanuts in the oven for 15-20 minutes, or until they start to brown. Then remove their skin and chopped chunks.
  5. INSTRUCTIONS Step 1: Make the sauce Mashed 2 chili peppers with 2 tablespoons of sugar and chopped lemongrass.
