  1. PREPARATION
  2. Pumpkin: Place your pumpkin on a large chopping board and remove the stem with a sharp knife. With the knife tip, cut clean lines straight down to quarter the pumpkin, then spoon the seeds out.
  3. Place each quarter on a level surface and cut into wedges, then slice them off to remove the skin.
  4. Please note that 1/2 cup of pumpkin should be reserved for the dipping sauce.
  5. Green beans: Set out a large bowl of ice water before blanching the beans. In a large saucepan or stock pot, bring 4 quarts water and 1 tablespoon salt to boil.
  6. Add the green beans and boil until tender-crisp, but still bright green, about 3 to 5 minutes. Drain well and immediately plunge into ice water to stop the cooking.
  7. INSTRUCTIONS
  8. Step 1: Make the Pumpkin Dipping Sauce
  9. You will need the following ingredients for this recipe: 20g toasted peanut butter, 1/2 cup pumpkin, 100ml coconut milk, and a pinch of sea salt. After that, purée the sauce mixture in a blender until smooth and silky.
  10. Step 2: Make the Rolls
  11. In the bottom third leaving a portion of rice paper wrapper exposed at the bottom, add a small amount of purple cabbage, green beans, carrot, and lettuce.
  12. Tuck in the bottom, then the sides and continue to roll away from you to seal. Repeat with remaining rice papers and veggies filling.
  13. Add rolls to plate next to dipping sauce, sprinkle the rolls and sauce with crushed almonds, then serve.
