  2. Macaroni: Fill a pot halfway with cold water for every pound of macaroni. Put 1 tablespoon of salt in the water. Cover the pot and bring it to a boil, then add the macaroni.
  3. Continue stirring the macaroni on a regular basis, maybe every minute or so. Boil macaroni for 10 minutes in salted water. Rinse it well with cold water.
  4. Tofu: Cut them into bite-sized cubes. Next, heat a large skillet over medium heat. Once hot, add the oil and the tofu cubes.
  5. Sauté for 5 minutes, shaking/flipping occasionally to cook on all sides, until the tofu has a slight crust on each side and has begun to brown.
  6. Tomatoes: Puree one and cut the other into slices.
  7. Tomato Sauce: Combine the tomato puree, 2 tablespoons soy sauce, 1 tablespoon sugar, 1/3 teaspoon salt, and a pinch of freshly ground pepper in a mixing bowl. Whisk rapidly until the sauce is completely dissolved.

  10. Sauté the vegetable oil, shallots, and garlic in a pan over high heat until fragrant. Then add the king oyster mushrooms and stir-fry until golden.
