  2. Ginger and Onion: Roast the ginger and onion for around 15 minutes in an air fryer, then peel them.
  4. Step 1: Making the Veggies Broth
  5. Bring 1.5 liters of water to a boil then add carrots, turnips, onion and ginger.
  6. Simmer for 30 minutes to bring out the natural sweetness of the veggies in the broth.
  7. Step 2: Making the Tofu Paste
  8. Begin by removing the veggies from the broth pot. Following that, cut off the pointed end of the silk tofu and compress the entire block of tofu with your hands to create pressure that will allow the tofu to pop out.
  9. Note: Tofu will float to the top of the simmering broth, making a vegetarian paste without any need for additional stirring.
  10. Step 3: Season the Broth
  11. Add 100 grams of gray oyster mushrooms, 1 tablespoon of sugar, 1 tablespoon of vegan seasoning powder, and 1/2 teaspoon of salt to the broth and gently stir to dissolve the seasoning.
  12. When the broth returns to a boil, you may add prepared vegetarian ingredients such as fried tofu or vegetarian sausages and cook to your liking.
  13. Step 4: Finish and serve
  14. Finally, ladle simmering broth over noodles or rice vermicelli, vermicelli, or noodles, as desired. Season with minced culantro, coriander, and a sprinkle of freshly ground pepper to taste.
