  1. PREPARATION
  2. Taro: Wear gloves or oil your hands when preparing taro. Remove taro’s thick slightly hairy peel with a knife under running water to avoid the stickiness.
  3. To prevent discoloration, place peeled and diced chunks of taro in acidulated water. Next, blanch taro in boiling water for 5 minutes. When taro has been cooking, it will turn from bright white to cream to a dappled grayish-purple.

  5. Step 1: Stir-fry the Taro
  6. In a large saucepan, heat the vegetable oil and garlic until fragrant.
  7. Season with 1/2 teaspoon of salt and add the tofu, taro, and diced carrots to the saucepan.
  8. Stir fry for 5 minutes or until the taro is soft.
  9. Step 2: Toss in the White Rice
  10. Remove the saucepan from the heat, toss in the white rice, season with 1/2 teaspoon of salt, and re-heat.
  11. Continue stirring until the rice is completely warm. To finish, sprinkle with a pinch of freshly ground pepper.
  12. Step 3: Finish and serve
  13. After the fried rice has been cooked for a few minutes, it is ready to serve. Additionally, you may serve the rice on a plate and top it with diced taro.
