  1. PREPARATION
  2. Make the Sauce: To make the noodle stir-fry sauce, combine 4 tablespoons soy sauce, 1 teaspoon chili sauce, 1/2 teaspoon sugar, and a pinch of pepper in a small bowl and whisk well to combine.
  3. Before stir-frying, combine 2 tablespoons of the sauce with the boiling noodles and toss well to coat the noodles with flavor.

  5. Step 1: Sauté the Veggies
  6. In a pan over high heat, heat the cooking oil and sauté the shallots. Following that, add the mushrooms, starting with the julienned carrots, season with a pinch of salt, and sauté until the mushrooms are cooked.

  8. Then toss in the noodles, bok choy, and tofu, along with the remaining stir-fry sauce. Stir-fry all ingredients on low heat until almost cooked; add the celery last, and you're finished.
  9. Place the noodles on a platter and sprinkle with a pinch of ground pepper, then serve with chili sauce or soy sauce to taste.
