Tamarind: To extract the juice from 50 grams of tamarind, soak it in 1/2 cup of boiling water for 5 minutes.

Step 1: Sauté the Mushrooms

Begin by stir-frying the tomatoes in a little bit of oil in a saucepan over medium heat on the stove. Then, to the saucepan, add 500ml of water together with the tamarind juice and heat till boiling

Add 3 palm sugar cubes and 1 teaspoon of salt to taste the mixture.

Notes:





Vegan Sour Soup with Tomatoes has a sweet-sour taste and a distinct sawtooth coriander aroma. For the sawtooth coriander, you may use rice paddy herb or any other herb you have on hand. You may substitute about 3-5 tablespoons of regular sugar for the palm sugar in this soup. You are free to alter the seasoning to your preference!
