  3. Tamarind: To extract the juice from 50 grams of tamarind, soak it in 1/2 cup of boiling water for 5 minutes.

  6. Marinate Sauce: Begin by marinating king oyster mushrooms in 1 tablespoon ground garlic, 1 tablespoon red onion, 1 tablespoon sugar
  7. 2 tablespoons soy sauce, 1 tablespoon chili sauce, 1/2 teaspoon vegetarian seasoning, and a sprinkle of freshly ground pepper.
  8. After marinating, put it to stir-fry immediately. Do not marinade for an extended time to prevent the mushrooms becoming watery, since the tamarind's simmering time is also long enough for the spices to soak the mushrooms.
