  2. Prepare the filling: Cut two sheets of soybean skin in half and blanch for 30 seconds in boiling water. Then drain the water, rinse well with cold water, and squeeze out any remaining moisture.
  3. Squeeze out the excess water with cheesecloth to help the vegetarian filling stick better.
  4. Make the Filling: In a large mixing bowl, combine the drained soybean skin, wood ear mushrooms, chopped lemongrass, laksa leaves, 1 tablespoon vegan seasoning powder, a bit of ground pepper, and black pepper.
  5. Combine well to absorb the seasoning ingredients.
  6. Trim the hard edges of the remaining 3 soybean skin sheets. You may blanch them in hot water to include them in the filling.
  7. Soak them for 30 seconds in water, then quickly remove them and lay them out on a cutting board.
  8. Make the Covering: Fold the soybean skin in half, place a bit of vegan filling on the upper edge, then gently roll it all the way to the end.
  9. Then, wrap the vegetarian sausage rolls in cling film or foil and steam for 30 minutes.
  11. After steaming and cooling, cut these soybean skin rolls into bite-size pieces and serve immediately, or fry them till golden brown to make them more attractive.
  12. Served with laksa leaves and a salt-and-pepper lemon mixture for dipping. Enjoy!
