  2. Onion: Cut the onion into wedges, reserving a few thin slices to toss with the finely chopped sawtooth coriander before cooking.
  3. Dried Shiitake Mushrooms: You will need to rehydrate them in water and remove the tough stems. Depending on the size of the dried shiitake mushrooms, they typically need to be soaked in the warm water for at least 15-20 minutes.
  4. Once the dried mushrooms are rehydrated, they will turn tender and spongy and ready to be used.

  6. Step 1: Make the Poached Sauce
  7. Poached Sauce: Whisk together the curry powder, five-spice powder, sugar, and vegan seasoning powder in a small bowl. Then add the 3 teaspoons of chili sauce and 4 tablespoons of filtered water, and stir constantly until the sauce is completely melted.
  8. Marinated Veggies: Prepare a bowl of carrots, potatoes, tofu, and shiitake mushrooms. Combine the prepared sauce with the veggies and marinate for a few minutes to allow the flavors to permeate the vegetables.

  10. In a large pot, heat a little vegetable oil, and add three crushed lemongrass stalks. Add all the veggies and stir until the sauce is gradually absorbed by the vegetables. Then, add 500ml coconut water and 300ml filtered water to the mixture.
