  2. Rice Paper: Cut rice paper in half.
  3. Nori Sheet: Cut the seaweed into tiny squares that will fit within the rice paper based on the width of the rice paper.
  4. INSTRUCTIONS
  5. Step 1: Make the Filling
  6. Heat a small amount of oil in a skillet, add the mushrooms and tofu, along with 1 teaspoon vegetarian seasoning, and stir-fry until the tofu is golden and fragrant, then remove from the heat and put into a separate bowl.
  7. Add 3 tablespoons of dried seaweed, coriander, a pinch of toasted sesame, and crushed pepper to that combination. Evenly mix the filling.
  8. Step 2: Make the Rolls and Dipping Sauce
  9. Nori rolls: Wet the rice paper and arrange the toasted sesame seeds first, followed by the seaweed leaves. Add just enough filling and wrap it up like a spring roll.
  10. Dipping sauce: In a small dish, whisk together 3 tablespoons soy sauce, 2 tablespoons water, 1 teaspoon vinegar, and 1 teaspoon sugar.
  11. And you are done. Take a seat, then serve immediately.
