  2. Julienne the Ginger: Stack two to three slices of ginger, placing them flat on the cutting board. Now cut into thin strips.

  5. Pour the water into a cooker and bring to a gentle boil over medium heat. Reduce the heat to medium-low, add the lemongrass and simmer for 30 minutes.
  6. Next, add the rice and cook, uncovered, for at least 1 hour.
  7. Step 2: Stir-fry the Mushrooms
  8. While waiting for the congee to soften, heat a little bit of vegetable oil in a skillet and sauté the ginger until golden brown.
  9. Following that, add the mushrooms and quickly stir-fry, seasoning with a little of salt and pepper to taste.
  10. Add the stir-fried mushrooms to the congee cooker, and season it again to your liking.
  11. Step 3: Finish and serve
  12. Ladle the congee into a serving bowl, and garnish with fresh golden-fried tofu skin, cilantro, fried shallots, salt, and pepper, as well as peanuts and sprouts.
