In Korea, mixed rice is a popular healthy food. There are many methods to prepare mixed rice with various additions, depending on the area, taste, and ingredients.

Inspired by Korean mixed rice meals, Anchay.vn and Food Blogger Duong Yen Nhi (Accnhi) developed the Vegan Mixed Rice recipe with a version that reduces hard-to-find ingredients and adds a little "Vietnamese", particularly sweet potatoes, which will make the dish more nutritious and fulfilling.

Method

  1. PREPARATION
  2. Rice: Rinse white rice with cold water. Place 1 cup of rice in a rice cooker bowl. Add 1 ½ cups of water. Start cooking in the rice cooker. When rice finishes cooking, rice cooker will switch to 'keep warm' (after approx 15 minutes).
  3. Allow rice to stand for 5 minutes with the lid closed before serving.
  4. Enoki Mushroom: Cut the bottom 2 inches off the mushrooms and discard. Rinse and drain, then separate the mushroom strands gently.
  5. Fresh Shiitake Mushrooms: Cut off the base, rinse and drain, then dice the mushroom.

  7. Step 1: Cooking
  8. Place the pan on heat, add 1 tablespoon of oil, and bring it to a boil. After that, add the onion, tomato, and mushroom one by one, stirring constantly.
  9. Toss in the spinach last, and season with a teaspoon of salt and a pinch of freshly ground pepper after the veggies have softened slightly.
  10. Stir well to ensure that all of the seasonings are absorbed by the ingredients.
  11. Step 2: Finish and Enjoy
  12. Remove the pan from the heat and place the cooked rice into a bowl.
  13. Add the vegetables mixture with prepared peanut and sweet potato on top, then sprinkes with roasted sesame, if desired.
  14. Combine all of the ingredients well and serve immediately.
