Method

  1. PREPARATION
  2. Gray Oyster Mushrooms: Cut off the base of gray oyster mushrooms and soak in water with a pinch of salt for 15 minutes before rinsing and draining, then chopped.
  3. Bean Sprouts and Chives: Blanch the bean sprouts and chives for 2 minutes in boiling water with a pinch of salt, then drain and cool. Soak for 10 minutes and drain. The veggies also are crisp and delicious, and the color is still fresh!
  4. Noodles: Bring a large pot filled with few cups of water to a rapid boil. Add the vermicelli noodles and boil for 2-3 minutes. Stir gently with chopsticks to prevent sticking.
  5. INSTRUCTIONS
  6. Step 1: Prepare sauce In a small bowl, combine the ingredients, including 1 tablespoon frying oil, 1 tablespoon minced red onion and ginger, and 1 tablespoon chopped gray oyster mushrooms.
  7. Following that, add 200ml filtered water or 100ml water (if you like a saltier dish), 4 tablespoons soy sauce, 1/2 teaspoon vegan seasoning powder, and a pinch of ground pepper to the seasoning combination.
  8. Turn on the heat and slowly simmer the mixed sauce in a skillet until it thickens.
  9. Step 2: Combine noodles and serve : Blanch the noodles first, then add the bean sprouts, chives, lettuce, chopped cilantro, and mushroom sauce, finishing with fried onions and peanuts.
  10. When ready to serve, combine all of the ingredients and you are set to go. Enjoy!
