Simple Tasty Recipes

Ingredients for 2 Servings

    Sweet Corn (or White Corn)
  • 200
    ml canned Coconut Milk
  • 1/3
    cup Vegetable Oil
  • 1/4
    teaspoon Salt
  • 3-5
    scallions (if onions are not available, cilantro may be substituted)

  2. Corn: Cut the corn from the bottom and remove the leaves (green outer husk) along with the corn silk.
  4. Step 1: Grilling
  5. Grill the corn in a grilled pan with some oil over low heat for 6 to 8 minutes, or until the kernels are soft, depending on how big your ears are (you can also grill in the oven or brazier as you like).
  6. After that, remove the corn kernels from the cob to a bowl.
  7. How to remove corn kernels: Take the end of a spoon and pierce it in between the corn line and remove one of the lines of corn.
  8. Then using your thumb to push the other line of corn in the direction of the line of corn that you have removed. You will see that the corn is coming out very easily.
  9. Step 2: Cooking
  10. Thicken the Coconut Milk: Gently heat coconut milk in a nonstick skillet until it begins to thicken after a few minutes of boiling. Season with salt to taste once the coconut milk has thickened.
  11. Make the Scallion Oil: Thinly slice the scallions and place them in a separate bowl. After that, heat the vegetable oil in a skillet until it is hot, then pour the heated oil into the cup of green onions and stir well.
  12. Step 3: Finish
  13. At the end of the process, pour coconut milk over the bowl of corn and onion oil on top to finish the meal. Enjoy!
