VEGAN MIDNIGHT RICE

The Mushrooms: Marinate the oyster mushrooms with a pinch of salt and pepper and fry until golden brown, finishing with a sprinkling of fried onion.

The Mung Beans Paste: Soak 100 grams of skinless mung beans in water for 1-2 hours, then rinse and finely blend with 200ml of water to obtain a bean paste combination as shown.

Season with 1 teaspoon of vegan seasoning powder and a pinch of ground pepper to taste.

Begin by heating the pan and sautéing the shallots. Add a thin coating of bean paste and lid. Fry for approximately 5 minutes on low heat, or until the bean paste below is golden brown.

Similar to the first recipe, add the minced veggies and fry until golden brown.

Note: You should prepare one basic fried mung bean piece first, and then add veggies to the second one to create two distinct toppers.
