VEGAN MIDNIGHT RICE

by Thao Le

Since ancient times, Midnight Rice has been a food that has been served throughout the night, often known as witching hour. It is commonly distributed to porters who labor late at night in Hue, Vietnam's ancient capital. Today, when it comes to this peculiarly named rice meal, we will certainly be intrigued by both the name and the meal's distinctive and creative presentation. Midnight Rice is also a traditional meal associated with Hue's ancient city walls and the culinary culture of Vietnam.

This Midnight Rice meal is cooked in a manner quite similar to that of mixed rice in Vietnam. The chef will compress the cooked rice in the bowl to give it a lovely shape, then lay it in the center of the serving plate and surround it with all of the prepared veggies. All of these processes are required to ensure that the Midnight Rice meal is presented most attractively. They are all well-balanced with a hint of each ingredient and are all chopped or minced for ease of enjoyment.

With the natural sponge texture of cooked rice and the variety of flavors created by the colorful toppings, this meal makes an unforgettable impression on anybody who has the pleasure of enjoying it. With that specific inspiration in mind, Anchay.vn and Food Blogger Duong Yen Nhi (Accnhi) will share a Vegan Midnight Rice recipe with you today. Please refer to the following recipe!
