VEGAN MANGOSTEEN SALAD

Mangosteen: Take a sharp knife, and score the fruit around its equator. Don’t cut it too deeply only a little more than 1/8th of an inch.

Then you can squeeze it gently and it will crack easily along the cut then just pry it open in half. That white center is the flesh that you eat. Finally, cut it into thin slices and set aside.

Mushrooms: For 15 minutes, steam mushrooms with lemongrass stems. After then, let the mushrooms to cool.

Salad Dressing: Combine 5 tablespoons lemon juice, 4 tablespoons filtered water, 2 teaspoons sugar, 1 tablespoon chili sauce, and 1/2 teaspoon salt in a mixing bowl. Stir well to dissolve the spices.

Combine steamed mushrooms and onions in a large mixing bowl. Season with 1/2 teaspoon salt and pepper to taste. Then toss in the mangosteen and laksa leaves, followed by the salad dressing. Combine well to ensure that all ingredients are absorbed.

Finally, garnish with fried shallots and roasted peanuts. Served with green bean porridge and vegetarian crackers. On the side, dipped in a salt, pepper, and lime juice sauce.
