  2. For the fillings: Begin by sautéing minced lemongrass, smashed tofu, and minced mushrooms in a bit of cooking oil, followed by a quick stir-fry.
  3. Next, add 3 tablespoons of soy sauce for flavoring. Gradually stir until the tofu is absorbed, then season with ground pepper.
  4. Note: Add annatto oil if you have it on hand for a more vibrant tofu filling!
  5. Making sausage skewers: Cut the rice paper into pieces and moisten them. Place the filling in the center and fold the two ends together to wrap it like a spring roll; make sure the rolls are flat and not round like spring rolls.
  6. Pinch the center of the roll with a skewer after wrapping.
  7. For the dipping sauce: Slit the skin of two tomatoes lightly, then peel and remove the seeds to lessen the sour flavor. Blend the tomatoes with half a cup of water.
  8. Soak 20 grams of tamarind paste in boiling water to extract the tamarind juice.
