PREPARATION
-
Corn: Cut the corn from the bottom and remove the leaves (green outer husk) along with the corn silk.
-
Remove kernels from the cob: Take the end of a spoon and pierce it in between the corn line and remove one of the lines of corn.
-
Then using your thumb to push the other line of corn in the direction of the line of corn that you have removed. You will see that the corn is coming out very easily.
-
The batter: Pour 80 ml of filtered water into a mixing dish and stir in 50 grams of deep-fried flour until well combined (make the mixture not too thick).
-
Scallions: Scallions that have been finely chopped, with the white part kept separate.
-
INSTRUCTIONS
-
Step 1: Make the Filling
-
Heat a skillet on the stove and add a little amount of vegetable oil. Stir-fry the white part of the scallions until fragrant, then add the gray oyster mushrooms and sweet corn kernels.
-
Stir in 1 teaspoon of vegetarian seasoning spices and sauté for a couple more minutes, or until the mixture is absorbed.
-
Step 2: Grilling then serving
-
First, you want to place one sheet of rice paper in a skillet (preferably non-stick). Followed by mushrooms and sautéed corn to keep the rice paper firm.
-
Reduce the heat to low and add a thin layer of the batter, spreading it evenly.
-
Then drizzle with green onions, shallots, margarine, and chili sauce. They are almost like the signature of this dish!
-
Allow the rice paper to grill over low heat for about 5 minutes. When the edges of the rice paper turn super crispy, fold it in half and you're done.
