Sandwiches have exploded in popularity as a breakfast dish among the Vietnamese, especially among children. On the street, sandwiches prepared with traditional ingredients are available in a variety of places. However, has anybody ever heard of a sandwich made entirely of Vegan Grilled Sandwich Skewers?

This is an extremely creative vegetarian side dish, as demonstrated by and Food Blogger Duong Yen Nhi (Accnhi) in the recipe that follows. Vegan Grilled Sandwich Skewers are a snack consisting of a mushroom sandwich covered in a vegetarian sauce and then grilled till crispy and nicely browned.

  2. Shiitake Mushrooms: Just place the dried shiitake mushrooms in a heatproof bowl and add really hot or even boiling water to cover it by a few inches.
  3. Let the mushrooms sit for at least 20 minutes until the caps are tender. Then wash and drain them well before slicing them into long pieces.
  4. Tofu: They should be sliced into long sticks to match the length of the mushrooms, then fried.
  5. Sandwich: Trim off the sandwich's edges, then split it in half. Following that, slice it about the same length as the mushrooms and tofu. Finally, flatten the sandwich using a rolling pin.
  6. Make Grilled Sauce: In a mixing bowl, combine 2 tablespoons soy sauce, 1 tablespoon vegan oyster sauce, 1 tablespoon chili sauce, 1/2 teaspoon sugar, 1/3 teaspoon five spice powder, a drizzle of sesame oil, and a pinch of ground pepper for flavor.
  7. Stir until the seasonings are completely dissolved in the sauce.
  9. Step 1: Stir-fry the filling
  10. Sauté shiitake mushrooms and tofu in a little bit of cooking oil. Season with 1 to 2 teaspoons of grilled sauce to permeate the ingredients.
  11. Then remove them from the heat, chill the fillings slightly, and roll them onto the skewers.
  12. Step 2: Making Sandwich Rolls
  13. Wrap one sandwich slice with one tofu stick and one mushroom piece, then stick the skewers to bind the sandwich roll.
  14. You may skewer up to three sandwich rolls at a time, or as many as you like.

  16. Grill them in a nonstick skillet, air fryer, or oven. Before baking, coat the outer layer with some cooking oil or melted margarine to avoid the sandwich rolls from scorching.
  17. When the sandwich rolls are nearly done, spread more grilled sauce on them for a richer taste. Spread gently and use a little bit of sauce, since the sandwich is very absorbent.
  18. Step 4: Finish and Enjoy
  19. Enjoy them by dipping them in grilled sauce or chili sauce. Do not forget to add some cucumber and vegetables for more flavor.
