  2. Grapefruit: Start by scoring the skin of the grapefruit and peeling it like an orange. Pull the grapefruit in half, then in quarters. Make a little slit in the membrane of one section.
  3. Use your fingers to pull back the membrane. And pull the flesh out. Here’s another view of releasing the flesh from its membrane-cage. Repeat with the rest of the grapefruit.
  4. How to make the Dressing: In a mixing bowl, combine 1 tablespoon of lime juice, 1.5 tablespoons of sugar, 1/2 teaspoon of salt and pepper, and 1 tablespoon of chili sauce with minced chili.
  5. Stir the mixture thoroughly until the seasonings are completely dissolved.
  6. INSTRUCTIONS
  7. In a large mixing bowl, combine grapefruit, chopped basil, fried shallots, and fried oyster mushrooms. Drizzle with salad dressing and toss thoroughly.
  8. Finally, garnish with toasted sesame seeds and serve with rice paper rolls filled with fresh veggies and a vegetarian fish sauce dip. Enjoy!
