  1. PREPARATION :
  2. Enoki Mushrooms: Lay a cluster of enoki mushrooms on a chopping board. Use a sharp knife to cut off the earthy root section. Use your fingers to gently separate it into bite-sized bundles while checking if there is any noticeable dirt hidden inside.
  3. Put it in a large bowl filled with clean water. Give it a gentle wash. Replace the water and wash it again if necessary.
  4. You may also wash it under a running tap, then drain well. If it’s going to be steamed or stir-fried, pat dry with a kitchen towel or kitchen paper.
  5. INSTRUCTIONS
  6. Add a drizzle of oil to the pan and place the enoki mushrooms. Sauté over high-medium heat until all of the moisture has drained from the mushrooms.
  7. Season with 2 tablespoons of soy sauce for a richer flavor, then reduce to medium-low heat and sauté until the mushrooms turn color and dehydrate. This dish is ideally served with steaming rice, toast, or white porridge.
