Curry Sauce: To make the curry fried rice sauce, whisk together 50 mL coconut milk, 2 teaspoons curry powder, 1 teaspoon sugar, and 1/2 teaspoon salt in a large mixing bowl until well combined.

Step 1:

In a pan, heat a little oil and then sauté minced garlic until fragrant, then add the king oyster mushrooms, red bell pepper, and onion and stir-fry until everything is well combined, then add the curry sauce and stir again.

Simmer until the sauce has thickened, then add the rice and frying until it spread evenly. Remove the pan from the heat when the rice grains are loose and golden in color.

Step 2: Decorate and enjoy

Last but not least, garnish with basil and serve on a serving bowl.
Notes:





You should be prepared the rice at least two hours in advance or the night before. To simmer the curry paste, heat the frying oil to a reasonable temperature and keep it there until the curry powder releases its flavor without burning. Furthermore, you may include some of your favorite veggies into this meal.
