    teaspoon Crushed Almonds (optional)

Method

  1. PREPARATION
  2. Pasta: Boil the water with a pinch of salt and olive oil in a large saucepan. Once boiling add the pasta, and cook for 8-12 mins, depending on the package directions. Drain and leave to steam dry for a few mins.
  3. Pea: Place the peas in a saucepan and pour over just enough boiling water to cover them. Bring the peas up to a boil, turn it down so just simmering and place a lid on top. Simmer for 2 minutes, then drain the peas and done.
  4. Potato: Put the potatoes in a large saucepan, add cold water to cover them by about an inch. Bring to a boil, lower the heat, and simmer for about 15 minutes until they are fork-tender.
  5. Drain and cut into pieces, then blend them well with 250ml of Coconut Milk in a blender.
  6. INSTRUCTIONS
  7. Step 1: Make the Creamy Sauce : Begin by heating the oil in a large saucepan over medium-high heat. Once the oil is heated, add the garlic and stir-fry until fragrant.
  8. Then, pour the potato sauce into a saucepan and season with 1 teaspoon salt and 1/2 teaspoon curry powder, stirring constantly.
  9. Step 2: Cooking : When the creamy sauce has thickened, add the boiled peas and simmer for another 2 minutes, then mix in the pasta.
  10. Step 3: Finished Remove the saucepan from the heat and sprinkle crushed almonds on top. Enjoy!
