  2. How to cook Sticky Rice in a rice cooker: Measure out the glutinous rice and place it into a strainer. Under running water, wash the rice until the water runs clear.
  3. Add the rice with a pinch of salt into the cooking pot.
  4. Add the water and make sure the rice is leveled.
  5. Plug in your rice cooker and close the lid. Follow your rice cooker’s instruction, or use the “normal” setting and press start.
  6. Once the rice is finished, open the lid and use the rice paddle to fluff up the rice to remove excess moisture and let it sit for an additional 2 minutes.
  8. Step 1: Stir-fry the Curry Filling
  9. Heat a bit of cooking oil in a skillet, add the smashed lemongrass and all the pre-prepared veggies, and stir-fry until combined. Stir in 2 tablespoons of curry powder and 1 tablespoon of vegetarian seasoning to taste.
  10. Add 1 cup of coconut milk and simmer the veggies over low heat until the sauce is well-drained, then remove from the heat and set aside to cool.
  11. Step 2: Make the Sticky Rice Balls
  12. After the sticky rice has been cooked and is still warm, knead it until it is malleable and easy to stick.
  13. To make shaping the sticky rice simpler, line the cutting board with a piece of food wrap. Begin by spreading a sizeable amount of sticky rice evenly and flattening it on a cutting board.
  14. Continue filling the middle with the curry veggies, then molding and wrapping the edges to make a complete sticky rice ball.
  15. Step 3: Finish and serve
  16. Coat the sticky rice balls in breadcrumbs and chill them for 1 hour in the freezer. Then deep fry the sticky rice balls in oil until they begin to become golden brown.
  17. Remove the sticky rice balls from the oil and drain them. Finally, cut them in half, then serve with your favorite chili sauce and fresh veggies. Enjoy!
