  2. Mango: To make cubes, turn the mango 90 degrees and cut similar sized lines perpendicular to the other lines to create a crosshatch pattern.
  3. Be careful not to cut through the mango skin. Score the two smaller sides similarly for slices or cubes. Use a large spoon to scoop out the flesh of the mango from the skin.
  4. Braised Sauce: Using a small mixing bowl, whisk together 3 tablespoons soy sauce, 2 teaspoons chili sauce, and 1/2 teaspoon salt until thoroughly combined.

  7. Preheat a large saucepan over high heat with a little bit of vegetable oil, then add the ripe mango, followed by the braised sauce and about 100ml of filtered water.

  10. Serve with steamed rice and a garnish with chopped chilies and freshly ground pepper on top.
