  1. PREPAIRATION
  2. Chop the eggplant into pieces, soak in salty water for 10 minutes. Drain and rinse with cold water, let dry.
  3. Douse the dried shiitake mushrooms, wash with cold water and cut in half.
  4. Crush lemongrass and ginger.
  5. INSTRUCTIONS
  6. Step 1: Making braising sauce
  7. Combine four tablespoons of soy sauce, two tablespoons of chili sauce, one teaspoon of sugar, and ½ teaspoon of salt into a bowl.
  8. Gently mix the braising sauce until the sugar and salt dissolve.
  9. Step 2: Stir-frying the eggplant and shiitake mushrooms
  10. Pour vegetable oil into the pan, heat with the medium. Combine shiitake mushrooms and eggplant into the pan, stir-fry for minutes.
  11. Add the braising sauce and one cup of water to the mixture.
  12. Step 3: Finishing
  13. Turn down the heat to low, braise the ingredients until the eggplant is ripe and the sauce becomes drier.
  14. Add ground pepper and chili pepper to the braised mixture. Turn off the heat.
