Method

  1. Heat the cooking oil in a pan and sauté the finely chopped onions. Cook until they begin to turn golden.
  2. Add the minced garlic to the pan and cook for an additional 30 seconds, stirring constantly.
  3. Gradually add all the ground spices (turmeric, piri piri chili sauce, ground cinnamon, and ground coriander) to the pan. Stir-fry for about 1 minute to release their aromas.
  4. Stir in the tomato puree, lemon juice, chopped fresh parsley, and salt to taste.
  5. Cut the parboiled potatoes into 1/2-inch pieces and add them to the pan with the rest of the ingredients. Stir well to ensure the sauce evenly coats the potatoes.
  6. Add 3/4 cup of water to the pan. Cook uncovered for approximately 10 minutes, or until the potatoes are tender and the sauce has reduced to your desired consistency. If the potatoes appear dry during cooking, add a little extra water as needed.

Notes:

Ensure potatoes are parboiled until just tender but still firm enough to hold their shape when cut. This prevents them from becoming mushy during the final cooking stage. Adjust the amount of piri piri chili sauce to your preferred spice level.
