Method

  1. To prepare jars for bottling, place clean jars in a cold oven. Heat the oven to 325 deg F (160 deg C) and leave the jars at that temperature for at least 10 minutes, or until needed. Using a sturdy rectangular oven roasting tin can make removal easier and catch any drips during filling.
  2. Place the chopped green tomatoes (or tomatillos) and onions in a large pot.
  3. Add the sugar, apple cider vinegar, salt, ground nutmeg, cinnamon, and ground cloves to the pot. Stir all ingredients well to combine.
  4. Heat the mixture, stirring continuously, until the sugar has almost completely melted. Then, bring the mixture to a boil.
  5. Once boiling, stir well, reduce the heat slightly, and simmer the chutney uncovered for about an hour, or until the mixture becomes thick.
  6. Towards the end of the cooking time, add the sliced chili pepper to your taste.
  7. If the chutney does not thicken as expected, drain off any excess liquid. Cool the chutney, then refrigerate it. The chutney will continue to thicken as it cools.
  8. Pour the cooled chutney into hot, sterilized bottles and seal them for storage.

Notes:

The original recipe suggests using habanero chilies, but advises adjusting to taste as they might be too hot for Western palates. Feel free to use any chili you prefer and adjust the quantity. If the chutney doesn't thicken as desired, draining off extra liquid can help, as consistency may vary depending on the type of tomato used. The chutney will thicken further as it cools and is presumed to freeze well.
