Method

  1. Press the tofu firmly using a tofu press or by wrapping it in paper towels with a weight on top for at least 20 minutes to remove excess water.
  2. Slice the pressed tofu into uniform 2-inch by 2-inch squares, approximately 1/2-inch thick.
  3. In a blender, combine the soy sauce, lemon juice, molasses, cumin, coriander, pepper, cinnamon, sesame oil, Spike seasoning, and the pinch of saffron. Blend until smooth.
  4. Place the tofu squares in a shallow dish and pour the marinade over them. Let them marinate in the refrigerator for at least 1 hour, turning occasionally.
  5. Remove the tofu from the marinade, reserving the liquid for basting.
  6. Heat a skillet over high heat for a minute, then reduce to medium heat and add a thin layer of cooking oil.
  7. Add the tofu squares to the pan in a single layer. Sear until each side is slightly browned and caramelized, brushing the tops with the reserved marinade as you flip.

Notes:

  • Tofu Tip: For the best texture, always ensure your tofu is pressed thoroughly. Drier tofu will absorb more marinade and achieve a crispier sear.
  • Basting: Don't discard the marinade! Brushing the tofu with it during the searing process adds depth and creates that beautiful, sticky glaze.
  • Serving: This pairs exceptionally well with a side of fluffy couscous or a fresh cucumber and tomato salad to balance the rich, sweet-savory flavors of the tofu.
