Method

  1. Soak fresh black-eyed peas in cold water for about five minutes to soften them. (If using canned peas, skip this step).
  2. While the peas continue to soak, rub and gently squeeze them with both hands to gradually loosen the skins.
  3. Skim and discard the skins as they float to the top.
  4. Drain and rinse the peas thoroughly.
  5. Add the rinsed peas to a pot, along with salt and crushed chili pepper (or cayenne pepper). Cover with clean water.
  6. Boil the peas until they are tender.
  7. Serve the black-eyed peas, along with their cooking water, over oshifima or another stiff porridge.

Notes:

The recipe suggests using canned peas if fresh ones are unavailable. For a complete meal, consider cooking greens like spinach and serving sliced bananas with peanuts alongside.
