Method
- Prepare the vegetables by washing, peeling, and chopping them into uniform, bite-sized pieces to ensure even cooking.
- Heat the olive oil in a large, deep frying pan or skillet over medium-high heat.
- Sauté the diced onion and sliced fennel for about 1 minute until fragrant and beginning to soften.
- Reduce the heat to medium-low, add the remaining vegetables (potatoes, carrots, green pepper, and tomatoes), and simmer covered for 5-7 minutes, or until the potatoes are just tender.
- While the vegetables simmer, prepare the couscous by placing it in a heat-proof bowl and pouring the hot vegetable stock over it. Cover with a lid or plate and let it sit for 5 minutes until all liquid is absorbed.
- Once the vegetables are cooked, stir in the ginger, turmeric, coriander, cumin, cinnamon, and harissa paste. Cook for an additional minute to toast the spices.
- Fluff the couscous with a fork and fold it into the vegetable mixture. Add a squeeze of fresh lemon juice, season with salt and pepper to taste, and serve warm.
Notes:
- Texture tip: Ensure the potatoes are cut into small 1cm cubes so they cook quickly alongside the other vegetables.
- Spice depth: For a deeper flavor, lightly toast the dry spices in a dry pan for 30 seconds before adding them to the vegetables.
- Couscous fluffing: Always use a fork to fluff the couscous once the stock is absorbed to prevent clumping.
- Customization: Feel free to add chickpeas for an extra protein boost!
