Method

  1. In a large mixing bowl or a traditional gas'a, combine the fine semolina, flour, and salt.
  2. Create a well in the center and gradually add water, mixing until a cohesive, workable dough forms.
  3. Knead the dough vigorously for about 10-15 minutes by hand until it becomes very smooth, elastic, and supple. Alternatively, use a bread machine on the 'dough' setting.
  4. Allow the dough to rest for 5 minutes, covered with a damp cloth.
  5. Lightly oil your hands and work surface. Divide the dough into small balls, slightly larger than a golf ball.
  6. Heat a large flat skillet or m'ri over medium heat. Gently stretch each dough ball into a thin circle and cook on the pan for about 30 seconds per side until set but still soft.
  7. Stack the cooked flatbreads and keep them wrapped in a clean kitchen towel to maintain moisture. Once cooled slightly, tear the bread into small pieces by hand to prepare it for serving.

Notes:

Tips for success: The key to the authentic texture of Khobz Ftir is the elasticity of the dough. Don't rush the kneading process, as this develops the gluten necessary for the signature chew. For easy serving, keep a clean towel ready to wrap the hot bread immediately; this keeps it soft and prevents it from turning brittle. If you are preparing this alone, don't worry about tearing the pieces until all the bread is cooked, or invite a friend to assist for a more traditional experience! You can freeze the torn pieces and reheat them gently in a steamer before serving.
