Method
- In a blender or food processor, combine the chickpeas, tahini, olive oil, crushed garlic, lemon juice, and hot water. Process until the mixture reaches a smooth, creamy consistency.
- Prepare the Dukka: In a dry skillet over low heat, toast the sesame seeds, cumin seeds, and ground coriander for about 3 minutes, stirring constantly until fragrant. Remove from heat and transfer to a plate.
- In the same skillet, lightly toast the chopped hazelnuts for 1-2 minutes until golden brown.
- Mix the toasted hazelnuts and salt into the seed and spice mixture. Store any excess in an airtight container for up to one week.
- To serve, spread the hummus onto toasted whole-wheat pita bread and generously sprinkle with the prepared Dukka.
Notes:
Dukka is incredibly versatile; try it on salads, roasted vegetables, or simply dipped with olive oil and warm bread. If you prefer a nut-free version, you can substitute the hazelnuts with sunflower seeds or extra sesame seeds. Store the remaining Dukka in a cool, dark place to maintain its crunch and aroma.
