Meal 1: Vegan Water Spinach Sour Soup

Heat a little oil in a pot, add the tomatoes and 1 tablespoon of sugar, and sauté for 5 minutes, or until the tomatoes release their natural color. Next, bring 1 liter of water to a boil in the pot.

Once the water has come to a boil, add some water to the bowl containing 30 grams of tamarind paste. Stir the tamarind paste into the sour soup and add it to the pot. You can adjust the sourness of the soup to your preference.

Season with 2 tablespoons of sugar and 1 teaspoon of salt to taste, then add 10 pieces of fried tofu and water spinach. Finally, garnish with finely chopped chilies and coriander.
