Method

  1. Heat the oil in a pan over medium heat. If you prefer a lower-fat option, sauté the onions in a splash of water or vegetable broth until translucent, about 4 minutes.
  2. Stir in the tomato sauce, ground cumin, ground coriander, cayenne pepper, and salt. Allow the mixture to simmer and meld together for 2-3 minutes.
  3. Add the drained fava beans to the pan. Reduce the heat to low and use a fork or potato masher to reach your preferred texture—some people enjoy it completely smooth, while others prefer a rustic, chunky consistency.
  4. Cover the pan and continue to cook on low heat for an additional 5 minutes to ensure the flavors are fully absorbed.
  5. Serve warm alongside fresh pita bread. Optionally, garnish with a drizzle of extra virgin olive oil, a swirl of tahini, a squeeze of fresh lemon juice, or chopped fresh chili peppers.

Notes:

Fooll Mudammes is incredibly versatile. It keeps well in the refrigerator for up to 3 days, and the flavors often deepen overnight, making it perfect for meal prep. For an authentic experience, serve it with a side of diced cucumbers, tomatoes, and fresh mint. The acidity of fresh lemon juice is essential to brighten the earthiness of the beans.
