Method
- Place the diced eggplant in a large mixing bowl. Season with a generous pinch of salt and the freshly squeezed lemon juice. Toss to coat well and let it marinate for 30 minutes to soften the texture and remove any bitterness.
- Drizzle the olive oil over the marinated eggplant and toss thoroughly to ensure every piece is coated.
- Gently fold in the cooked black-eyed peas, minced garlic, and sugar. Stir carefully to avoid mashing the eggplant.
- Taste and adjust seasoning by adding freshly cracked black pepper and extra salt if desired. Serve at room temperature.
Notes:
- Texture Tip: If you prefer a firmer texture, you can lightly steam or pan-sear the eggplant for 5 minutes before marinating, though the traditional raw-marinated method is delicious if allowed enough time.
- Storage: This salad tastes even better the next day as the flavors have more time to meld in the refrigerator.
- Additions: Feel free to add fresh parsley or diced red onions for extra crunch and color.
