  1. PREPARATION
  2. Broccoli: Wash the broccoli under running water. Pat dry using a clean tea towel. Remove the leaves from the broccoli plant. Cut the florets from the main stalk. Leave around one inch of stalk on each floret and cut off any excess.

  4. Step 1: Prepare sauce
  5. In a saucepan over medium heat, heat 3 tablespoons of olive oil and sauté the chopped oyster mushrooms with 1 teaspoon salt and pepper.
  6. Stir well to spread the spices completely among the mushrooms, then remove from the heat and stir in the broccoli.
  7. Step 2: Combine veggies and serve
  8. Blanch the noodles first, then add the bean sprouts, chives, lettuce, chopped cilantro, and mushroom sauce, finishing with fried onions and peanuts.
