Artichoke Heavan Salad
From: Jacqueline Bigger, Albany, New York, USA

Preperation time: 30 minutes
serves about 5-10 people

  • 6 - Bottled artichokes
  • 6 - heads of field greens (iceburg, romaine, escarole)
  • 1/2 Bottle - olive oil
  • 1 tbs salt (optional)
  • 1 tbs pepper
  • 1-2 tbs all purpose herb seasoning
  • 4 large firm cucumbers
  • 4 large firm tomatoes
  • 3 large carrots
  • 1 tbs of vinegar
  • fresh kidney beans (or great northern beans)
  • Fat free Italian, Catalina, or French dressing

Chop your cucumbers, tomatoes and carrots in nice proportions, mix in large bowl with variety of field greens and lettuce.
You have the option of draining your artichokes before adding with your cucumber, tomatoes, carrots.
Next, drain your kidney beans, pat dry and add to other ingredients.
Include your tbs of vinegar, herb seasoning and olive oil with pepper
Add a pinch of Fat Free dressing.

As a vegan/vegetarian I serve this as a main course. It is very filling and goes well with grilled smoked organic/low fat tofu on the side.
Second, there are a variety of other indegredients you can add to this dish, this depends on your own personal taste. Whaa Laa!!
