Well, I'm finally getting more tomatoes than I can eat on a daily
basis! Found my very favorite fresh tomato sauce recipe and wanted
to share it.
- 3 cups peeled, finely chopped tomatoes (about 1 1/2 lbs)
- 4 T olive oil
- 2 cloves garlic, finely minced
- 3/4 t salt (or to taste)
- 1 t minced fresh basil
- pinch oregano
- freshly ground black pepper
- several drops lemon juice
- 1 lb. angel hair pasta
Place tomatoes in a large bowl and mix with olive oil, garlic, salt,
basil, oregano and pepper.
Allow to mainate at room temp for two hours.
Add lemon juice.
Serve over hot pasta.
Note: Sauce can be prepared in advance, but be sure to let it
come to room temp before serving.
Somehow, tho, to me it never tastes the same after it's been refrigerated.
