Here is a simple basic salsa called" Pico de Gallo."
It can be improved or improvised by adding different types of chiles
or by changing the consistency (i.e. blending, mashing, chopping)
Chop all ingredients very fine and mix them thoroughly. Add oil, salt
and a little water.
- 4 or 5 medium sized tomatoes (if you can't find ripe tomatoes
use Roma type)
- one small onion
- 2 Jalapeno chiles (or whatever you can handle!)
- 2 cloves of garlic
- one bunch of cilantro
- juice of two small limes (mexican or key lime is best, lemon
- 2 tbs. of olive oil
- 1 tsp. salt or to taste
You can use canned tomatoes if fresh tomatoes are too green.
Yellow chiles are also a nice addition because they are very flavorful.
Try Serrano chiles if you want a hotter salsa.
I love making my own salsas and I do lots of experimenting so if
you or anyone else needs any tips or recipes, feel free to write.
