Heat oil in a 2-quart saucepan over medium heat.
- 2 tablespoons oil
- 1 onion -- minced
- 2 carrots -- finely diced
- 1 stalk celery -- finely diced
- 1 cup wheat berries
- 1 cup brown rice
- 1/2 cup wild rice
- 4 1/2 cups vegetable broth or water
- 1/2 tablespoon kosher salt
Stir in onions, carrots, and celery, and cook until softened but not
Add wheat berries, brown rice, wild rice, vegetable broth, and salt.
Stir to combine.
Cover and cook for 40 minutes over medium to low heat.
