Stuffed Okra

  • 1/2 Pound Okra
  • 1/2 Teaspoon Paprika
  • 1/2 Teaspoon Chilli powder
  • 1 Teaspoon Mango powder (amchur)
  • 1/2 Teaspoon Ground ginger
  • Salt
  • 4 Tablespoons Oil
Wash the okra and dry on absorbent kitchen paper. Cut off the stalks and slice the okra in half lengthways.

Mix together the spices and salt. Stuff the okra with the spice mix and leave them to stand in a cool place for at least 30 minutes. Heat the oil and fry the okra for about 4 minutes, turning carefully to cook on all sides
