Mushroom Pilaf

This recipe takes minutes, an easy way to use up old cooked rice. It is easily adapted to whatever vegetables you have on hand. Serves 2-3

  • 3 cups cooked rice
  • 2 cups sliced mushrooms
  • 1/2 cup frozen peas
  • 1 medium sliced onions
  • 1 tsp chopped ginger
  • 1 tsp chopped garlic
  • 1 tbsp oil
  • 2 bayleaves
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder/cayenne pepper
  • 1/2 tsp garam masala/curry powder
  • salt to taste

  • Optional garnishes: lemon wedges, chopped cilantro

Heat oil in a wok.
Fry the bayleaf, ginger, garlic, onion for 2 minutes.
Add turmeric, chili powder, garam masala and fry for a few seconds.
Add mushrooms and peas and stir fry for 2 minutes.
Add rice and stir fry till heated through.
Add salt to taste.
Garnish with chopped cilantro and lemon wedges.
