Lemon Rice

About 20 mins cooking time, modified version of a South Indian recipe

  • 2 cups rice
  • 2 cups veggie broth
  • 2 cups water
  • 1 tsp mustard seeds
  • 1/2 tsp tumeric
  • 1 chile pepper, cut into small pieces (Jalapeno or serrano)
  • 2 tbsp lemon juice
  • 1/4 cup crushed peanuts
  • 2tbsp oil (Reduce quantity to 1 tbsp for low-fat version)
  • 2 tbsp chopped cilantro (optional)

Heat oil in a large utensil.
When hot, add mustard seeds.
When they pop, quickly add tumeric and green chilli pepper.
Then add the rice and fry for a few minutes.
Add water and broth, bring to a boil.
Then reduce heat and cover.
Cook for about 20 mins or till the rice is cooked.
Let stand for a few minutes.
Then add lemon juice and peanuts and stir till blended.
Add cilantro, if using

serve with Raita or plain yogurt
